The lowdown
Chef Bryan Palilonis' brick-and-mortar taco shop, an offshoot of his Caja Madera taco truck (on the road since 2016), set right on the Lamoille Valley Rail Trail with indoor and outdoor seating. Tacos, burritos and nachos feature house-smoked meats like carnitas and pork belly, plus seafood and vegetarian fillings. The Caja Madera truck still caters and appears at Highland Lodge's summer Margarita Mondays.
